What can I subsitute for buttermilk in a recipe?

Michiganmom gave me some suggestions in another post but I was wondering if anyone else had ideas?

Add a tablespoon of vinegar to a measuring cup. Fill the rest of the measuring cup up with milk, let stand for about 5 mins and you have buttermilk

If you want to use buttermilk but just don't have it. You can put either 1 tablespoon of vinegar or lemon juice in a 1 cup measuring cup then fill it with milk to the 1 cup mark. Let sit, it'll kind of curdle.

If a recipe calls for buttermilk and don't want to use it I then I have no idea what you'd use in place, probably a different recipe that doesn't call for buttermilk.
