I have a great recipe for potato soup that uses ground beef and corn and sour cream....very yummy and filling. Made it the other day when we had a cool day. Awesome!
Sure..it's super easy and very filling...my family loves it!
1 pound ground beef, 12 medium potatoes (peeled & cubed), 3 cups water, 2 cups milk, 1 can whole kernal corn (drained), 1 cup sour cream and salt and pepper to taste.
Brown the ground beef and drain. Add the potatoes, water, salt & pepper, bring to a boil, reduce heat, cover and simmer for 15 to 20 minutes until potatoes are tender. Stir in the milk and corn. Cook for 5 minutes, just until warm. Add a small amount of the hot soup to sour cream and mix . Gradually stir sour cream mixture into soup, stirring constantly. Heat through but do not boil.
