
Fall lends itself to delicious slow cooked meals that not only feed the family, but also warm up the house with the tasty aroma of a home cooked dinner. I love making roasts in our oven whenever I get the chance. When I find roasts on sale at the store, I usually buy two - one to cook and one to freeze.
I place the roast in a roasting pan, and make sure to line the bottom of the pan well with tinfoil so that clean up is easy. I season it simply with salt, pepper and olive oil. Then I add in garlic cloves, onions, and carrots to give a nice overall flavor. Celery is also great. I cook the roast long and slow in the oven until tender.
This is a great "set it and forget it" method that allows me to take care of other things while dinner is making.
It's a favorite meal, not only because it is easy to make, but because there are wonderful leftovers for the next day.

Love pork chops and pork roast with mashed potatoes. My dh cooks alot in the fall: fish, cottage pies, turkey roasts.
