
I love leftovers. There, I said it. While most people dread having to have the same thing two nights in a row, I know that I can almost always make a new dish out of last night's dinner. Left over rice and veggies from Chinese food? Make egg friend rice. Left over meatloaf? Make delicious open-faced sandwiches.
But the key to making good meals out of leftovers is all how you store it the night before. I like to use tinfoil because it keeps meats moist and allows steamed or grilled veggies to keep their crispness. You can do this by making a pouch out of the tinfoil similar to the pouch that you would use for cooking on the grill or in the oven. And, if you decide not to use your leftovers, the packages are good to go for the freezer.

The one thing I ALWAYS have leftovers of is redbeans (or white, or black eye LOL)
I always make 2 lbs, we eat one and freeze the other.
pizza otherwise DD wont eat leftovers , so I make something else out of them only cold pizza will do for her.
we will use leftover chicken from our quesadillas for lunch the next day.
My overnight chicken casserole. It's always better 2 days later.
Leftovers dont last long in my house. Either my hubby eats them when he gets home from work or they are ate for lunch the next day.
Leftover spaghetti is so good!
