I found this in one of my Kindle cookbooks, it looks good so I thought I would share:
2 flour tortillas (I'll use whole wheat)
1/2 cup of grated cheddar
Several thin slices of tart apple (I plan to use granny smith)
Sprinkle an even layer of cheese over one tortilla. Scatter the apple slices on top of the cheese and top with the remaining tortilla. Microwave for 30 seconds or until the ccheese melts. For a crisper tortilla, use a large skillet and crisp for 1-2 minutes on both sides, until the cheese is melted. Cut into 6-8 wedges.
I plan to use the crisper method. This is somethng I would consider taking for lunch as well.
ETA: The book is Healthy Brakfast Recipes for Kids and it is on Amazon for .99!!! Lots of great recipes for sure!
