Mini Meatloaves and Night of the Living Dead Spuds
I take great pride in making spooky themed dinners for my family during the Halloween season, and last night's dinner was no exception. What was on the menu? Why, mini meatloaves and night of the living dead spuds of course!
I made my meatloaf according to my favorite recipe. But I used tinfoil lined mini loaf pans instead of one large loaf pan.
For the spuds, I made my normal mashed potatoes, but used a piping bag to place them on the plate in the shape of a ghost. I covered the meatloaf in a rich dark gravy. And I used pimentos to make spooky red eyes on the spuds.
Judging by the empty plates, everyone seemed to love it.
