What to do with Left Over Pork Loin?

I made a HUGE pork loin last night and I am trying to think of some new creative ways to use the left overs. I usually do some kind of soup or fried rice or tacos. I would appreciate any new ideas any of you may have!

 We usually make burritos.  DH will dice the meat and makes a sweet but spicy sauce with hot sauce, brown sugar, and butter and then we add it to Spanish rice, re-fried beans, lettuce, pico de gallo and shredded cheese in a burrito.

A friend made burritos from a beef roast and the were great! I"m sure pork would work just as well. She added chopped green chiles, some salsa, and garlic.
