How do you use up your Thanksgiving leftovers?

We've had turkey sandwiches for lunch. I've made a pan of turkey shepard's pie with the leftover mashed potatoes and a pan of turkey pot pie. I'll make potato pancakes with the rest of the potatoes and I want to make turkey soup today or tomorrow.

My hsuabnd made turkey sandwhiches. I just put a little of everything on a plate and eat it

I usually eat Thanksgiving plates for a few days.  Now I'll freeze the leftover meats until I use them in a soup or casserole.  I'll use as much of the veggies and potatoes for sides until we can't stand them anymore!

Turkey Potpie. I sautee onions, celery add the diced turkey, remaining gravy (add extra if needed), bag of frozen mixed veggies (diced size).  Place in double pie crust and bake.

 Mostly it's been sandwiches (turkey, ham and roast beef) but I'm searching for a turkey hash recipe and I think if I cut the roast beef into strips I can make a pepper steak dish that I used to really love when I was a kid.  The ham (hambone really) will be a flavor base for green beens and the ham cap (mostly fat) will go in some black-eyed peas.
