Healthy Eats Part 1 - Easy Italian Veggies

Healthy eating might not be something you associate with the Holiday season. After all you're more likely to find calorie-laden casseroles and baked goods at your family's house than you are salad. But you don't have to eat like that all winter long. There are plenty of recipes that are both healthy and tasty, making great meals in between big holiday gatherings.

Here's a recipe for easy Italian vegetables that make a delicious side for baked chicken or fish.  Remember, if you're brave enough you can grill outside, but why not use a handy stove top grill pan instead?

1 sheet Reynolds wrap heavy duty aluminum foil

1 small onion, thinly sliced

4 medium zucchini or yellow squash, sliced

1 medium tomato, cut into wedges

½ cup Kraft Italian dressing

PREHEAT grill to medium-high.

LAYER vegetables on sheet of foil; drizzle with dressing.

BRING up foil sides. Double fold top and ends to form one large foil packet, leaving room for heat circulation inside.

GRILL 14 to 16 minutes in covered grill. /span

I like this easy and yummy!  I drink a lot of water and try to get in more veggies.

I try to eat lots of fresh veggies in between sampling cookies.

I use lighter ingredients to make things. Applesauce in cookies, olive oil to replace regular oil is some cases.
