Savory Sides Part 2 - Flawless Roasted Vegetables

Sides don't have to be time consuming to be delicious. I think sometimes people have the misconception the longer they slave away in the kitchen, the better the food will taste. This is not always the case. Take this recipe for Flawless Roast Vegetables. It's as easy as one, two, three - literally!
1 sheet Reynolds Wrap Non Stick Foil
1 medium onion, cut into wedges
2 large zucchinis, sliced
1 large yellow squash, sliced
1 medium red bell pepper, sliced
2 tablespoons olive oil
1 teaspoons dried Italian seasoning or 2 tablespoons fresh herbs
Salt and pepper to taste
1 lemon halved
PREHEAT oven to 400°F.
LINE a shallow baking pan with Reynolds Wrap Non-Stick Foil with non-stick side toward food
PLACE vegetables in a large bowl. Add olive oil, seasoning or herbs, salt and pepper and toss to coat.
SPREAD vegetables in a single layer In the foil-lined pan. Sprinkle additional Italian seasonings or fresh herbs on top of the vegetables, if desired.
PLACE pan of vegetables into the oven on the top rack.
BAKE 15 minutes or until vegetables are crisp-tender.
SQUEEZE lemon over vegetables for even more flavor.
Moms, what are your favorite winter time vegetables?
Yum my dh makes roasted veggies all the time. He uses potatoes, parsnips, carrots.
I made roasted veggies for the first time yesterday, and next time I'll add less oil than I did, but otherwise they were fine.
My favorite winter veggies are sweet potatoes, butternut squash.
I don't usually roast veggies. Maybe I'll try that sometime.
