My neighbor just gave me a bunch of collards! How do you cook them?

 I usually just plop a dollop of bacon grease in them with salt and pepper. What about you? How do you prepare them?

 smoked turkey, a little salt and cayenne pepper, i boil them until they're really tender and sometimes i add a little margarine

Huh...I just realized that I've had them plenty of times, but I've never cooked them.  I've always had them either at a friend's house or a restaurant.

I like to cook them with some evoo, salt, pepper and a little vinegar.

Dh makes them with bacon or ham hocks.

I have had them in a dish with cheese- kind of like Au Gratin Potatoes- but with the collard greens.  It was delish and easy to make.  Found it on a blog a long time ago.

Use fresh leaves for making wraps.  Yumm!
