simple cake mix (from scratch) ??

 I love to cook and I have a strong desire to bake but I'm not a baker at all other than making what's in the box. LOL! I would love if anyone knows how to make a simple cake mix that a beginner like myself can master.

 2 cups all purpose flour

1 1/2 cup white sugar

1/2 cup shortening

1 cup milk

3 1/2 teaspoons baking powder

teaspoon of salt

teaspoon vanilla extract

3 eggs

I've made lots of from scratch cakes, but honestly we love the lightness of the boxes ones.  So I usually just stick with the box.

     I make a lot of cakes. I'll give you some recipes that are tried and true, that always turn out good.

    My family loves this one

     

    Hummingbird Cake
    3 cups flour
    2 cups sugar
    1/2 teaspoon salt
    1 teaspoon baking soda
    1 teaspoon cinnamon
    3 eggs, beaten
    3/4 cups vegetable oil
    1 1/2 teaspoons vanilla extract
    8 oz. can crushed pineapple with juice
    1 cup chopped pecans
    2-3 ripe bananas mashed (2 cups)
    Mix together flour, sugar, salt, baking soda, and cinnamon. Fold in eggs, vegetable oil, vanilla, pineapple with juice, pecans and bananas. Blend well and divide into 3 greased and floured 9-inch cake pans. Bake at 350 for 25 to 30 minutes or until toothpick comes out clean. Cool in pans about 10 minutes. Turn out onto wire rack and cool completely before frosting.
    Cream Cheese Frosting
    1/2 cup butter, softened
    8 oz. pkg. cream cheese, softened
    16 oz. confectioner's sugar
    1 teaspoon vanilla extract
    3 tablespoons chopped pecans
    Fold together butter and cream cheese. Gradually add sugar. Add vanilla. Stir well. Garnish with pecans.

     This one is very easy.

    Kentucky Butter Cake
    3 cups flour
    2 cups sugar
    1 tsp. salt
    1 tsp. baking powder
    ½ tsp. baking soda
    1 cup buttermilk
    1 cup butter, softened
    2 tsp. vanilla or rum extract or 1 T. dark rum
    4 eggs
    Sauce
    ¾ cups sugar
    1/3 cup butter
    2 tsp. vanilla or rum extract or 1 T. dark rum
    Powdered sugar for garnish
    Heat oven to 350. Generously grease and flour bundt pan. Blend all cake ingredients at low speed until moistened; beat 3 minutes at medium speed. Pour batter into greased & floured pan. Bake at 350 for 55-70 minutes or till toothpick inserted in center comes out clean. Combine sauce ingredients in small saucepan. Cook over low heat, stirring occasionally, until butter melts. Pierce cake and slowly pour hot sauce over warm cake while in pan. Invert on plate. When cool sprinkle with powdered sugar.

     Another easy one

    Do Nothing Cake

    2 cups all-purpose flour
    1/2 teaspoon salt
    2 cups sugar
    1 teaspoon vanilla
    2 eggs, slightly beaten
    1 (20 oz.) can crushed pineapple, undrained
    1 teaspoons baking soda
    Combine all ingredients and mix by hand. Do not use electric mixer. Pour into a greased 9 x 12 inch pan and bake for 30 to 35 minutes at 350 degrees. Spread topping over cake while warm. Makes 12 servings

    TOPPING:
    1 (5 oz.) can evaporated milk
    1/2 cup butter
    1 cup sugar
    1 1/2 cup coconut
    1 cup pecans, chopped

    Mix milk, sugar and margarine together. Boil 5 minutes. Add coconut and pecans. Spread over warm cake.

     This is pretty for St Patrick's Day

    Pistachio Cake


    1 pkg. yellow cake mix
    1 pkg. Royal pistachio pudding
    1cup club soda
    ½ cup oil
    ½ cup chopped nuts
    Mix cake mix, pudding mix and nuts.
    In separate bowl, beat eggs well. (number called for in cake mix) Add oil to eggs. Beat 4 minutes. Add dry ingredients to eggs, alternating with soda. Pour into tube or bunt pan. Bake for 50 minutes at 350 degrees.
    Frosting
    1 pint heavy cream whipped
    Mix 1 package instant pistachio pudding into 1 cup milk. Fold pudding mixture into cream. Add 1 tsp. of almond or vanilla flavoring and frost cake.

    Southern Apple Cake

    1 cup sugar
    2 eggs
    1 cup vegetable oil
    1 1/2 cups all-purpose floue
    1/2 teaspoon salt
    1/2 teaspoon baking soda
    1 1/2 cups thinly sliced apples
    1/2 cup chopped pecans or walnuts
    Caramel Topping
    1/4 cup sugar
    1/4 cup firmly packed brown sugar
    2 tablespoons butter
    2 tablespoons evaporated milk or half & half
    1 teaspoon vanilla


    DO NOT PREHEAT OVEN. Grease an 8" baking pan. In a large bowl, beat eggs, sugar and oil at medium speed with an electric mixer until smooth. In a separate bowl, sift together flour, salt and soda. Stir flour mixture into egg mixture by hand until thoroughly combined. Add apples and nuts. Gently stir until distributed throughout batter. Spread batter in prepared pan. Place pan in a cold oven. Bake at 325 for 50-55 minutes. Let cool in pan. Prepare caramel topping: In a small saucepan over medium high heat, combine all ingredients and bring to a boil. Cook for 2 minutes, stuirring constantly. Stir in vanilla. Pour warm caramel topping over cool cak in pan. To serve, cut into squares. If desired, garnish individual servings with pecan halves.

    This cake can easily be doubled and baked in a 9x13" pan.
