At this time of the year, many families are looking towards the sea for dinner ideas. My family is no exception. We have started Fish Fridays for the next two months. It's a healthier option and we love trying out new recipes.
But since fish can sometimes be a daunting item to cook, it's great to have some quick cooking shortcuts up your sleeve.
My favorite is pouch cooking. Simply use a piece of tinfoil to create a flavor-sealing pouch. Place the fish and any other ingredients directly in and cook in the oven. It's a self-contained meal that takes minutes to make.
First, try a meaty fish like Red Snapper that can hold up to bold flavors. Create a bed of sweet onions and colorful bell peppers. Place the fish on top and drizzle with olive oil. Add salt and pepper to taste along with lemon rings. Close it up and cook in the oven until baked through. Serve over rice. I like to use either brown or Jasmine rice.
