Rice Cooker Tips Part 1: Perfect Rice and Steamed Veggies

When I registered for my wedding, I remember looking at an isle full of kitchen gadgets and the only one I was really interested in was a rice cooker. I've had that same one for seven years plus, and it still works like a charm. In fact, it's become one of my most favorite tools in the whole kitchen.
Our family loves rice, and I love the convenience of having a tool that allows me to set it and forget it. Cooking rice on the stovetop is usually just a recipe for disaster when you have children - at least in my house. It will always end up burnt or underdone because it needs time and a watchful eye.
My favorite meal to cook is a simple chicken ginger stir-fry. I make the white rice in the rice cooker as directed and then use the steamer attachment for some carrots, broccoli, and celery (or whatever veggies I have on hand). While that is cooking, I sauté some chicken breast in teriyaki sauce and sliced ginger. And by the time the chicken is done, my rice and veggies are done too.
Serve chicken over rice and veggies and top with pan sauce.
