I made these delicious little roll-ups for dinner the other night. My partner is doing a paleo diet and I'm trying to be supportive, and although a lot of nights we end up eating separate meals, I was totally happy to eat this. This recipe fed two adults and one toddler, so if you have a bigger family you may want to double or triple the recipe. If you aren't trying to do a paleo diet yourself, add a side of rice to make this a more complete meal. These would also make a great lunch if you packed the romaine separately from the chicken mixture.
2 tbsp sesame oil
8 oz shiitake mushrooms, diced
2 tbsp rice cooking wine
2 cloves minced garlic
1 inch of ginger root, peeled and minced
1 large carrot, diced
1 red bell pepper, diced
1 lb ground chicken (or mince a couple of chicken breasts)
4 tbsp low sodium soy sauce
10 or so romaine lettuce leaves, trimmed, cleaned and dry
Heat the sesame oil over medium in a pan. Add the shiitake mushrooms and cook in the hot oil until they appear to have a light sear. Add the rice cooking wine and cook until the liquid is mostly evaporated. Add the garlic, ginger, carrot and pepper and cook until mostly tender. Add the chicken to the mix, until cooked through, mixing it thoroughly with the vegetables. Finally mix in the soy sauce. Break the rigid bottom section off a lettuce leaf and fill the center of the leaf with a heaping spoonful of the chicken mixture. Roll the leaf up and devour. Repeat, repeat, repeat!
