Slow Cooker Short Cuts – A Winner of a Chicken Dinner
If you were to ask me what my favorite kitchen appliance was, I'd say that is hands down my slow cooker. I've had it for several years and have made every kind of meal in it - appetizers, breakfast, lunches, dinners, and desserts. But by far, my favorite meal to make is dinner, because using the slow cooker really frees up my day.
This amazing chicken dinner is so easy to make it might become a part of your regular recipe repertoire. All you need is a pound of chicken breast or boneless, skinless chicken thighs. Cut red potatoes into thick slices and cover chicken. Then pour one can of condensed chicken soup and one can of condensed cream of mushroom soup over the potato chicken mixture. Cook until tender. Serve with salad and sliced, buttered bread.
If you really want to get creative, go ahead and try dessert in your slow cooker too. Yes, I have two of them. I can cook dinner in one and dessert in another. A quick email search would show up at least a dozen delicious dessert recipes (like bread pudding or apple cobbler) that would be finished up in just an hour or so. Top any of those with vanilla bean ice cream and you have a pretty solid dessert. Yum!
