Healthy Vegan Meal Recipes?

I want to start cooking more healthy vegan meals (I'm not vegan, but do try to eat plant-based a lot).

I"m addicted to sugar and eating way too many snack meals, so QUICK and EASY recipes wtih simple ingredients are appreciated.

I want low-fat, veggie-centric recipes (not grain based), I have plenty for getting my fats and carbs in!

Totally vegan, or are you willing to do dairy?   If you're willing to eat dairy, I recommend these black bean quesadillas.  They are so good, and we have them frequently.  We aren't vegan, but they're a favorite in our household anyway.  Also, on the same blog, there are quite a few other vegan recipes.  On the right side of the page, she has all the 'tags' for her recipes, and there are 243 recipes tagged as 'vegetarian,' along with 9 tagged as 'vegan.'  Also, all the meals on the site are budget-friendly.  She does a breakdown of cost for each recipe, and I've been able to do many of the recipes for even cheaper than she lists depending on where I shop.

I recommend the Forks Over Knives cookbook.

If you haven't seen the movie, I recommend that too.
