Mind-Bendingly Delicious Porridge in a Crockpot
OK, OK, maybe I exaggerated a little with the mind-bending part, but this porridge is such a treat on a cool, rainy morning, and it's so nice to wake up and have a hot breakfast waiting for you. The recipe can also be easily doubled to serve a horde if you have company and don't expect everyone to be getting up at the same time. I like to have crunchy add-ins such as chopped walnuts on hand in case I'm in the mood to bulk up my porridge. I know a lot of people add milk to their cooking oats, but I've noticed that causes the porridge to burn in the crock pot overnight, so I wait and add it at the end. Serves eight.
2 cups steel cut oats
8 cups of water
3 tart apples, peeled and chopped
2 tsp cinnamon
1/2 tsp ginger
1/2 cup brown sugar
handful of raisins
1/2 cup chopped dried apricots
1/2 cup chopped dates
Before you go to bed at night, throw all of the ingredients listed in a crock pot and give a quick stir. Turn the crock pot on to the low setting. When you wake up, turn the crock pot off and give the porridge another good stir to incorporate the crunchier bits. Scoop an enormous bowlful and top with almonds, walnuts, maple syrup, milk, cream, whatever you have on hand. Sometimes I plop a giant scoop of whole milk yogurt on top of my porridge because full-fat dairy is how I roll.
