These cookies are totally diabolical, I tell you. Warm from the oven, the chocolate and caramel centers are gooey and melt right into the chocolate cookie encasing it. Cooled down for an hour or so, the caramel center is chewy and delicious, like the Rolo candy that is used to make these cookies. That's right, the secret ingredient to one of the best cookies ever is the unassuming Rolo.
2 1/2 cups flour
3/4 cup unsweetened cocoa
1 tsp baking soda
2 cups brown sugar
2 sticks of butter
2 tsp of vanilla
48 Rolo Candies
Preheat the oven to 375 degrees. Stir together the flour, cocoa and baking soda. Set aside. With a mixer, or using your super strong arm muscles, cream together the sugar, butter, vanilla and eggs. Slowly mix in the dry ingredients until there are no lumps. Put the dough in the refrigerator to chill for a half an hour or so, and then pull the dough out and form it into 1 inch balls. Push a Rolo into the center of each dough ball and cover the Rolo completely with dough.
Place each dough ball on an ungreased cookie sheet and bake for 7-10 minutes. If you really want to live it up, serve these still warm, with ice cream on top.
