I ran into this recipe after discovering that the combination of butter and Tabasco Sauce is divine on beans, or for frying tofu, and wanted to discover other uses for the combination. The butter mellows the heat of the Tabasco Sauce, and the cooking process caramelizes the sauce nicely. Add some shallots, garlic, basil and white wine and you're pretty much grilling up the fanciest chicken wings you've ever tasted.

Ingredients:

6-8 tbsp melted butter

1 cup dry white wine

1 bottle original Tabasco Sauce

1 large shallot, minced

3 cloves of garlic, minced

1 tsp of dried basil, or fresh if you have it on hand

1 tsp salt

Juice of 1 lemon

1 jalapeno pepper, seeded and minced

In a saucepan, heat the butter, wine and Tabasco Sauce over low heat, to combine and burn off the alcohol in the wine. Whisk the mixture over low heat for a few minutes, then remove from heat and add the rest of the ingredients. Once cool, pour over the meat or vegetables you intend to grill and cover tightly. I recommend letting this marinate in the fridge for at least 4 hours, but overnight is even better.

Do you ever make your own marinades?

I make several of my own marinades.  Depending on what I'm making I use fresh herbs and citrus.  I love garlic so fresh garlic is usually involved

I've never made my own, but I'd be willing to try... This sounds really good!

My husband will love you for this!

We do a lot of our own marinades.  I very seldom do one from a recipe though. I am more likely to gather and pour on whatever I have available or sounds good at the time. My husband made oriental flavored bbq ribs last night with his own marinade.

That sounds incredible! I'd ove the recipe if you have the time to share it! This tabasco butter marinade is surprisingly less hot than you might imagine, if he likes a lot of heat I'd add jalapenos.
