big YAY!  We consume quite a bit of coconut oil and unsweetened coconut flakes, and I use coconut milk as a sub for milk in recipes.

Oh....and we use coconut flour.  I used some this very morning to make pancakes.

I've never heard of coconut flour does it have a strong flavor.?

It's a great alternative to wheat flour.  It's got 3x the fiber!

Definite Yay. Love coconut...though I prefer it fresh with a little agave on it. Though I use it as often as possible...but my kids and dh don't like it and it affects ds2's sensory issues so I don't get to use it often.
