Three Speedy and Fresh Pesto Recipes

Pesto is a great option for a busy evening, because it takes even less time to prepare than the pasta you might toss it with, and it's full of fresh ingredients and good fats. These three non-traditional recipes embrace the fresh produce of this season-smear them on grilled chicken or fish, toss them with pasta, rice. or roasted potatoes. Spread it on crostini for an awesome snack. You really can't go wrong with the bright flavors of pesto. 

Pea, Mint and Cashew Pesto

Whir the following ingredients in a food processor until smooth:

2 cups of fresh peas, boiled for a couple of minutes till tender. If using frozen peas, no need to precook.

2 garlic cloves

1/3 cup cashews

1/3 cup parmesan

6 or 7 mint leaves, coarsely chopped

1/2 lemon's juice

1/2 tsp salt

1/3 cup olive oil


Spinach Pesto

Whir the following ingredients in a food processor until smooth:

1 cup of spinach, packed

1/4 cup walnuts

1/4 cup parmesan

1 garlic clove

1/3 cup olive oil


Cilantro and Lime Pesto

Whir the following ingredients in a food processor until smooth:

1 cup cilantro

2 cloves garlic

1/2 lime's juice

1/4 cup parmesan cheese

1/4 cup walnuts

2 tsp of salt

1/3 cup olive oil

Those are great recipes.  Pesto also freezes well.  I used some tonight when I made a homemade chicken pesto whole wheat pizza.  It was delicious, and slightly healthy!

 I do make pesto.  Its easy for sandwiches and pasta dinners

That Cilantro and Lime sounds like a good one.  They all do.  I usually don't make it at home.

I love pesto, but don't eat it a lot b/c I'm allergic to dairy. I wonder if there is a good pesto recipe that doesn't have parm in it...???
