7/8 Salad of the Day

Summer in Tuscany Salad

Ingredients: 
2 large tomatoes
1 medium sized cucumber
1/2 C. sized red onion
1/4 C. cubed mozzarella cheese
1/4 C. marinated artichoke hearts, drained and chopped
1/4 C. of fresh parsley-clean and dry
Salt to taste
3 C. Romaine lettuce clean and dry
Freshly ground black pepper to taste
1/3 C. Italian dressing-plus more to serve if desired
Prep Instructions: 
Chop the tomatoes, cucumber, onion, cheese, artichokes and parsley into bite sized pieces. Combine in a bowl and toss with the Italian Dressing. Season with salt and black pepper to taste. Chop the lettuce, and arrange on 4 plates. Top each with a quarter of the chopped vegetables. Serve with more dressing if desired.

I think this all sounds good.  I'm not a fan of raw tomatoes, but I've learned to work around them.
