    Roasted Green Beans with Pancetta from the Betty Crocker site!

    

You Need:

GREDIENTS

oz thinly sliced pancetta, chopped
2
lb fresh green beans, trimmed
1
cup sliced sweet onion
2
tablespoons olive oil
1/2
teaspoon salt
1/2
teaspoon freshly ground pepper

To Make:

  • 1Heat oven to 450°F. In 8-inch nonstick skillet, cook pancetta over medium-high heat until crisp. Drain on paper towels; set aside. Reserve drippings.
  • 2In 18x13-inch half-sheet pan, toss green beans, onion, oil, salt, pepper and reserved drippings.
  • 3Roast uncovered 15 to 20 minutes, stirring twice, or until beans are tender. Sprinkle with pancetta.

Tips:

Called “Italian bacon,” pancetta is cured with salt and spices but not traditionally smoked. It comes in a sausage-like roll and is used commonly in Italian cooking. Substitute bacon, if desired.

I've found that this recipe also works quite well with haricot verts (French green beans, very thin), which I actually prefer because there's no need to roast the beans--sautee instead.

Is pancetta a type of bacon?  This looks really good.

I love green beans simmered in a crock with ham. Yummy
