Good Evening CMom members,

        During my survey of the freezer i noticed we had a lot of sausage left. I think i am going to try to cook sausage with one or two large sweet potatoes. Has anyone cooked something like this before?

Yes, in my crockpot.  I liked sweet so I added a bit of apple juice along with onions.

I'm the only one in the family that likes sweet potatoes so it's a rare occasion that we eat them around here.. we do love sausage though!

Ok the recipe I used was from I can say it was a win. I probably could have used some cumin but I had all the other ingredients. I used Italian sausage, red pepper, onion, sweet potatoes, salsa, 2 tomatoes, and a little salt and pepper. I really appreciate all of the CMom input.

 Here is a recipe that I have made a few times.

8 ounces uncooked spiral pasta

8 ounces smoked sausage, cut into 1/4 inch slices

2 medium sweet potatoes, peeled and cut into 1/2 inch cubes

1 cup chopped green pepper

1/2 cup chopped onion

2 tablespoons olive oil

1 teaspoon minced garlic

1 can (14-1/2 ounces)  Diced Tomatoes, undrained

1 cup heavy whipping cream

1/4 teaspoon salt

1/4 teaspoon pepper

1 cup (4 ounces) shredded cheddar cheese

Cook pasta according to package directions. Meanwhile, in a large skillet, cook the sausage, sweet potatoes, green pepper and onion in oil over medium heat for 5 minutes or until vegetables are tender. Add garlic; cook 1 minute longer. Drain.

Add the tomatoes, cream, salt and pepper. Bring to a boil; remove from the heat. Drain pasta; stir into sausage mixture. Transfer to a greased 13-in. x 9-in. baking dish. Sprinkle with cheese.

Bake, uncovered, at 350° for 25-30 minutes or until bubbly. Let stand for 5 minutes before serving. Makes 8 servings.

If you are talking about bulk sausage, you can pan fry it. Drain fat. Add 1/2 cup water and lay sliced or quarter sweet potatoes over top. Lid on and simmer till sweet potatoes are tender. Spoon into bowls and serve with crusty buttered bread. You didn't mention sauce ... I have used sweet & sour sauce before and it was very tasty flavor for the sweet potatoes.
