Cheesy, Italian-Inspired Chicken Meatloaf

This chicken meatloaf is not only easy to throw together for a work night meal, it is delicious and kid friendly. In fact, I originally got the recipe from the Weelicious website, which is loaded with toddler friendly foods. I've made a few changes, adding fresh basil since we had a freakish abundance of the stuff this year, as well as adding a little skim milk mozzarella. I usually serve this with a side of a little orzo, frozen mixed veg and butter and call it dinner. The original recipe calls for the meatloaf to be cooked in small muffin tins as bites, if you opt for that you want to cut your cooking time to 20 minutes.


1 lb ground chicken

2 cloves garlic, minced

1 small onion, diced

1 egg

1/2 cup breadcrumbs

1 tsp oregano

1 tbsp minced fresh basil

1/2 cup grated Parmesan

1/2 shredded skim milk mozzarella

1/2 cup marina sauce

1 tsp salt

Preheat the oven to 375 degrees. Mix all the ingredients in a bowl and then push the meat mixture into a 9 x 5 loaf pan that's been lightly greased with oil. Bake for 50 minutes or so, serve with a dollop of ketchup. This meatloaf is even excellent the next day in a sandwich with a slice of provolone and more marinara sauce.

I use ground beef, egg, bread crumbs.  Bake it for 30 minutes, add some golden mushroom soup to the top and bake it 30 minutes more.  With the remaining golden mushroom soup, add some water and heat it up and serve over the meatloaf.

I have never thought to use ground chicken for meatloaf.

That looks great! 

My meatloaf consists of  ground beef, egg, bread crumbs, onions, and garlic.  Then I will add sauces and seasonings like BBQ sauce or basil and oregano pending the flavor we are going for that night.

What a great idea. I don't eat red meat so this recipe is very appealing.
My dh and kids however love meatloaf, I'll be trying this one.
We all like things spicy here so I'll add a little chipotle in adobo sauce to mine

No one here would eat meatloaf so I've never made one. I grew up eating them though.

I normally use beef, but this looks interesting.
