Garlic and Olive Oil Sauteed Chicken w/tomatoes, green peppers, and onions over whole wheat pasta w/grilled asparagus.
My DH is out of town on business, and DS had football practice until 7:00 (we all stay for football practice.) So, on the way home, I stopped and grabbed a rotisserie chicken and steam in the bag brown rice and vegetables. A relatively healthy meal was on the table in literally 4 minutes. It made me feel smart ;)
