I'm a huge fan of quick dishes these days. Something about having a toddler alternating between laughing hysterically and weeping inconsolably in my kitchen makes me want to minimize the amount of time I spend cooking. This recipe is crunchy and fresh, and takes as long to prepare as it takes to boil noodles. Of course, my toddler won't eat it so there are always plenty of leftovers, but it makes a great cold lunch the next day, too.
1 8 ounce package of vermicelli
1 hand full of fresh cilantro
2 cloves of garlic
1 teaspoon hot sauce
The juice of one lime
1 tablespoon soy sauce
1 tablespoon honey
1 1/2 teaspoon sesame oil
1/4 teaspoon of salt
2 cups shredded cabbage and carrot mix
1 cucumber, chopped
1/4 cup chopped peanuts
Boil a pot of water to cook the vermicelli. While that boils, puree the cilantro, garlic, hot sauce, lime juice, soy sauce, honey, sesame oil and salt. Cook the noodles and drain, and then toss with the pureed sauce, shredded cabbage and carrot mix, and chopped cucumber. Divide into individual dishes and top with chopped peanuts.
