This is a great side dish for Thanksgiving-the tartness of the cherries and the mild onion flavor added from the scallions balances out the sweetness from the glazed sweet potatoes, plus it just looks pretty on the table. A bonus is that this is made on the stove top, so you can prepare it while the turkey roasts in the oven.
3 lbs sweet potatoes, peeled and cubed
1 1/2 cups apple cider
1/2 cup brown sugar
1/2 stick of butter
pinch of salt
pinch of cinnamon
1/2 cup dried bing cherries
2 stalks green onion, minced
In boiling water, cook the sweet potatoes partially, so that they are still pretty firm. Drain. In a saucepan, combine the cider, sugar, butter, salt and cinnamon and bring to a boil. Add the sweet potatoes and cherries and cook down until the sauce becomes a glaze and the sweet potatoes are cooked through. Remove from heat and stir in the green onions.
