That was me yesterday. I ended up doing chicken fajita casserole.  What have you decided?

I decided on this.....

but tweaked it a bit with onions/garlic/chicken stock...it is for bone in chicken but the reviews some did boneless/skinless....I sampled a taste and took a bite, it's ok very moist though

Moist is good! I like your tweaks, as I'd imagine that original recipe would be dry.

after eating it, it was pretty good....with baked brown rice and peas...the kids liked it that is all that mattered.  The only thing is it didn't brown since I had foil covering it, but it cooked
