Christmas Day Sausage and Egg Breakfast Strata

On Christmas morning, the last thing you want to do is get stuck cooking breakfast while everyone is opening presents and socializing. This hearty breakfast casserole is prepared the night before, and you can just toss it in the oven to cook while you are enjoying your morning. 


Ingredients:

1 tbsp butter

1 lb ground breakfast sausage, cooked and drained

1 cup onion, sauteed in the same pan as the sausage

8 eggs

2 1/2 cups milk

1/2 tsp each salt and pepper

1/2 cup parmesan cheese

1 cup shredded cheddar cheese

1 loaf french bread, cut into 1/2 inch slices


Grease a 9x13 inch pan with the butter. Line the pan with the sliced french bread and then spread the sausage mixture over the bread. In a bowl, whisk together the eggs, milk, spices,  Parmesan and cheddar cheese.  Pour the egg mixture over the bread and sausage mixture and cover tightly with plastic wrap. Refrigerate overnight. 

In the morning, bake the strata uncovered at 350 degrees for 40-45 minutes. Allow to cool a little, and then scoop onto plates and serve.

I usually keep it pretty simple and have cinnamon rolls in before the kids get up.   Then make fruit smoothies

Ds loves fruit smoothies. We always have fresh fruit in the house.

For as long as I can remember, our family has always had scrambled eggs, bacon, and cinnamon rolls for breakfast.  It's our tradition.

that sounds amazing, but I am allergic to almost everything in it. Boo. I made these for Christmas breakfast last year and will be making them again this year. A new tradition for us!

usually we do a small simple breakfast.  this year we will have a bigger breakfast because my parents can't stay for lunch.
