I've been on a cheese kick lately, specifically sharp cheddars. In slices on turkey sandwiches, on crackers, melted on apples (seriously, TRY THIS if you haven't), I've been eating cheese everyday. I discovered that these home-made crackers are a pretty good replica of Cheez-its and they are made of ingredients I always have on hand, so now I never need to go without my home-made Cheez-its again.
1 cup flour
4 tbsp butter, cut into pieces
1 cup shredded sharp cheddar
3/4 tsp salt
2 tbsp cold water
Pulse all ingredients except for the water in a food processor until crumblike, and then drizzle in the water and pulse until the dough comes together more. Wrap the dough in plastic wrap and refrigerate for 20 minutes.
Preheat the oven to 350 degrees and then roll out the dough until thin, about 1/8th of an inch. Use a cookie cutter to cut out the shape and then place the cut outs on a parchment paper lined baking pan. Bake for 15 minutes until crispy. Allow to cool.
