Fast and Easy Leftover Ideas

With all the holiday rush, there's never enough time to make a proper dinner. But, you don't have to have a lot of time to make things tasty. Leftovers are always plentiful during this time of year, so why not make the most of them.

Here are a few quick and easy ways to turn leftovers into delicious new meals:

Use left over pasta to make a delicious egg frittata. If you have left over vegetables or roasted potatoes, those can be thrown in as well.

Chop rotisserie chicken and mix with mayo and dill for savory chicken salad sandwiches.

Break up left over hamburger patties and add seasoning for a mid week taco feast.

Turn left over veggies into a stir-fry. Serve with white rice and sliced beef, chicken or tofu.

Make a quick Hawaiian pizza with leftover honey ham. Use frozen pizza dough and canned pineapples.

I usually don't bother making over leftovers....just eat 'em.  DH takes leftovers for lunch the next day, too.

Sometimes I'll put leftover veggies in my omelets.

We actually don't have many leftovers.  Due to having a very small fridge, I usually only cook enough for one meal or one meal of leftovers we just eat as us.  

The only time I repurpose leftovers is if we have a whole turkey/chicken/ham, I will use leftovers for sandwiches, soup, or stew.

We often just eat them but after about 2 days the kids are sick of it and end up turning them into casseroles. I love adding leftover ham to egg scrambles.

Dh usually takes them to work for a hot lunch.

I do we have leftovers and no one works .... unless stuffed cabbage .. pizza, spaghetti they will eat the next day

We shred leftover chicken or pork and add BBQ sauce. Yum!
