What's your Easter menu?

This will be my first time making Easter dinner for my family, looking for ideas please!

We usually do Easter dinner with dh's family and they prefer things basic so it's usually just ham, mashed potatoes, and a vegetable and I make apple pie for desert

 ham or turkey, potatoes, brocolli and cheese, green beans, some devilled eggs, some some chicken and dressing or whatever. Then of course some desserts.

 What's your recipe for Ambrosia? I've seen a wide variety of recipes.. haven't found a specific one that I love yet!

We usually do Ham, Pickled Eggs, Mashed Potatoes, Green Bean Casserole, Breaded Cauliflower, Crescent Rolls, Baked Mac & Cheese, and maybe Cheese Cake for Dessert.

oranges, pineapple, coconut....and I'll use a dressing of thickened fruit juices or else juice & yogurt or pudding, or anything that I feel like doing at the time.

My DIL uses fruit cocktail, mandarin oranges, pineapple, coconut, whipped cream.

I'm not sure what I'm going to do for sure
I wanted to do a turkey but may make ham
Sweet pototoe casserole for sure .. It's my kids favorite

We often do turkey for the main; last year, I roasted leg of lamb.  Always have oven roasted bacon-wrapped asparagus and strawberry pretzel salad.  Last year's menu also included a gingered quinoa salad with peas, almonds, apples, and coconut; spinach salad with strawberries and feta; and shredded carrot salad.  Oh, always homemade rolls w/ holiday meals.

Holiday meals always get my grandma's coconut custard pie; for Easter, I might include a berry pie, lime bars, my mom's cream cheese cookies...basically, lighter, more seasonal flavors in the sweets.  (Compared, say, to Christmas or Thanksgiving.)

I usually do either ham or cornish hens.  Deviled eggs, mac'n'cheese, some type of veggie, yeast rolls and a jello salad.  Yummy!  :0)
