The temptation is strong, after a long day of work, school and activities, to delegate dinner to whichever place has the nearest drive-through. But that's bad for your wallet and your waistline. Luckily, with a little planning ahead, you can have dinner on the table faster than you could wait in line, order and pay at a fast food place.
I love those frozen veggies that are in bags you can just toss in the microwave and steam. You can also find beans and rice in those packets as well. I find the rice, for example, is just as good as what I'd cook myself, and it's only a three-minute zap to get healthy brown rice on the table.
What to serve with those miracle veggies? Fish cooks in a flash, and is a healthy source of protein. Dress it up with some lemon and breadcrumbs, or add savory spice blends like garam masala or Cajun seasoning. Mild-flavored fish adapts to just about anything you choose to do with it.
Another one of our fast go-to meals is pasta with pesto sauce. I boil the pasta, and meanwhile put peas and corn on the bottom of the colander so they heat up when I pour out the pasta on top. Once it's drained, I toss it with pesto sauce (tomato sauce would work, if you like it) and serve. If I have leftover meat or fish, I pitch it in for a little protein.
