Simple Cooking with Spring Vegetables

Sometimes the simplest way to plan a meal is to use what's fresh and in season. During the spring months, grocery stores are full of farm fresh vegetables that are at the peak of flavor. There's a lot to choose from and because most of them are in great abundance, they also come at a good price.

For a simple meal, try planning around any of these springtime seasonal vegetables:

Asparagus - Grilled, in a salad, or in risotto

Cucumber - In sandwiches, in salads, on their own with hummus as a snack

Celery - in soups, with a peanut butter for a protein pick me up

Mushrooms - Stuffed or sauteed

Corn - Roasted on the cob or by the kernel

Avocados - In tacos, as a salad topper, or in an omlette

I plan meals for a week at a time, sometimes more.  On days that I work, dinner is usually a crockpot meal, quick meal, or something DD can make....and I plan accordingly.  Planning ahead also gives me a chance to prep foods ahead of time as much as possible.

I do plan around seasonal veggies but I don't limit myself to them.

I check my calendar while making menus. I also plan crockpot meals if I'm going to be really busy most of the day, and grilling for when dh is home early. We use lots of veggies, especially in summer.

I try to meal plan as much as possible at the beginning of the week

We eat veggies with every dinner. I meal plan and post the weeks meal plan on the fridge for all to see. I ask everyone what they want so it's not just me making all the decisions.

I don't always have a specific plan, but I like to at least know what meats I'll be using on which days. We definitely love our seasonal veggies (especially in the summer when we grow our own!). :)

I live fresh veggies. In the summer that is just about all we use
