Simple Mealtime Solutions: Using Veggies Before They Go Bad

Ever go to the store and pick up a ton of fresh produce with very good intentions of eating them all during the week? Yeah, I think we all do that. But what usually ends up happening is that some things go bad before we even get a chance to use it.

Here are a few solutions that I use around my home to make a quick and easy dinner from the vegetables we have on hand.

Make a veggie scramble or omelets and top with shredded cheddar cheese

Shred into pancake mix for a savory flapjack. Serve with sour cream

Make stuffed mushrooms or stuffed bell peppers

Set up your own salad bar

Make veggie burritos, tacos or quesadillas

Moms, what do you do with your produce before it goes bad?

I freeze veggies that I'm not going to use in time.  They're great later in stir fry or soups/stews.

Fruit can also be frozen, for use in smoothies or to eat as a frozen treat.

Never made a frittata, though I have several recipes, and they look good.

things like berries,oranges, onions and peppers, even bananas we cut up and freeze, the kids eat the frozen fruit in place of sugary popcicles.

Good ideas.  Mine are always to far gone to do anything with them.  But I'll have to try some of these.
