Chopped Chicken, Black Bean and Mango Lettuce Roll-ups

With the upcoming hot and humid summer days coming fast upon us (or upon us already, depending on where you live), my meal plans are changing to include any foods that don't require a whole lot of cooking, and include some of the herbs coming up in my garden. This chopped lettuce wrap is a perfect quick meal, it's healthy, filling and full of flavor. Cook your chicken breast in advance and use any leftover chicken breast in salads or on sandwiches. See? Versatility.

Ingredients:

1 head of romaine, leaves separated and rinsed

2 baked chicken breasts, cooked with salt and pepper and then chopped

1 can of black beans

1 tomato, chopped

1 mango, chopped (I just use frozen mango, it's faster)

1 large handfull of cilantro, minced

2 scallions, minced

 Juice from 2 limes

1 tsp honey

Combine the chicken, beans, tomato, mango, cilantro, and scallions together in a bowl. Mix together the lime juice and honey and dress the chopped chicken mixture with it, tossing to coat. Fill the insides of 4 romaine leaves with the chopped mixture and roll the leaves up to form a little burrito. You can mix up your ingredients, I've used chickpeas in place of black beans and apples instead of mango and had great results. Enjoy!

When I don't want to turn on the stove, we cook on the grill.  Steak or pork chops & salad is a favorite.  I've also got a recipe for gazpacho that takes no cooking at all.

I like the spinach wraps or tomato basil
So many options to put in a wrap too

Yum! I might have to try this one. We recently bought a ton of fresh mango (10 mangoes for $2--how could we pass it up!?!). We've eaten a lot, but we also cut up and froze a ton of it.
