Frozen Cappuccino Dessert


* 1 (13 ounce) box whole graham crackers (may not use all)
* 16 ounces cream cheese, softened
* 3 1/2 cups cold milk
* 3 (3 1/2 ounce) packages instant chocolate pudding mix
* 1 - 2 tablespoon instant coffee, to taste
* 1/4 teaspoon ground cinnamon
* 8 ounces whipped topping, thawed
* chocolate sprinkles or grated semisweet chocolate bars


Arrange graham crackers in the bottom of a 13 x 9 pan, breaking crackers to fit if necessary. Beat cream cheese in a large bowl with an electric mixer on low speed until smooth. Beat in 1 cup of the milk. Add remaining milk, pudding mixes, instant coffee and cinnamon. Beat until well blended, about 1 - 2 minutes. Stir in 1/2 whipped topping. Spread 1/2 mixture over grahams. Repeat layers of grahams & pudding. Cover with remaining whipped topping, garnish
with sprinkles and freeze 3 hrs until firm.

FUDGESICLES Warning: contains raw egg, use this recipe at your own discretion. I've never had problems with it.

  • 1 c. milk
  • 1 egg
  • 3 Tbsp. sugar
  • 3 Tbsp. instant chocolate pudding powder

Mix ingredients thoroughly. Put into popsicle cups and freeze.

Cappuccino Pudding (can be low sugar/sugar free!)

  • 4 tsp. instant coffee granules
  • 1 Tbsp. boiling water
  • 1 1/2 c. milk
  • 1 small package chocolate pudding mix (can be sugar free)
  • 1/2 tsp. ground cinnamon
  • 1 c. Cool Whip

Dissolve coffee in boiling water and set aside.  In a mixing bowl, combine milk, pudding mix and cinnamon.  Beat on low speed for 2 minutes.  Stir in coffee.   Fold in Cool Whip.  Spoon into serving dishes.

 I usually make pudding in small individual cups for snacks and lunches.

  This is a favorite at my house:

Decadent Chocolate Trifle
21 oz package brownie mix, (or 18 ½ oz chocolate cake mix) prepared as directed. ½ cup Kahlua (optional)
Two (3oz. each) boxes instant chocolate pudding, prepared with half & half instead of milk
16oz container whipped topping or 1 pint heavy cream, whipped
8 small chocolate covered toffee bars (Skor), frozen and finely chopped or one
7.5 oz bag of almond brickle chips
Cut cooled cake into chunks. In glass trifle bowl, layer 1/3 cake, sprinkle with Kahlua, layer 1/3 pudding, 1/3 whipped topping, 1/3 candy chips. Repeat layers two more times

 This makes a very moist cake

 

Chocolate Bundt Cake
1 18 1/4 oz. pkg. chocolate cake mix
4 1/2 oz. pkg. instant chocolate pudding
12 oz. chocolate chips
1 3/4 cup milk
2 eggs

Preheat oven to 325. Grease and flour a 12-cup Bundt pan. Combine all ingredients in large bowl. Mix by hand 2 minutes. Pour into pan and bake about 40 minutes or till cake springs back when lightly touched with fingers.

May be served plain or dusted with powdered sugar or top with the following:

Chocolate Frosting
1 cup sifted powdered sugar
2 Tablespoons cocoa
2 Tablespoons butter, melted
1 teaspoon vanilla
1-1 1/2 Tablespoons half & half or milk
Combine sugar, cocoa and butter in small bowl. Beat at low speed. Add vanilla and milk, a little at a time, until spreading consistency is reached.
