This is a fabulous and easy side dish to throw together in a minute and bake alongside the main entree!

Creamy Baked Rice

  • 3/4 c. uncooked white rice
  • 14 oz. can chicken broth
  • 10 oz. can cream of mushroom soup
  • 4 oz. can mushroom pieces
  • minced onion, to taste
  • 3 Tbsp. butter, cut into small pieces

Mix all ingredients together and pour into a greased casserole dish.  Bake at 350° for one hour.

PIZZA CHICKEN
1 boneless chicken breast, pounded flat if thick
Salt, pepper, garlic powder and Italian seasoning, to taste
1 tablespoon pizza sauce
4 slices pepperoni
1 teaspoon butter or oil
2 fresh mushrooms, sliced
2 thin green pepper rings
1 ounce mozzarella cheese, shredded

Season the chicken with salt and other seasonings; grill. Meanwhile, sauté the mushrooms and pepper rings in butter or oil until slightly tender, but not mushy; set aside. Spread the sauce over the chicken, then top with the pepperoni, the pepper rings, mushrooms and then finally, the cheese. Sprinkle with a little additional Italian seasoning, if desired. Bake at 350º about 10-15 minutes or until hot and the cheese is melted. Serve at once.

Makes 1 serving
Can be frozen but the peppers will get soft

Chicken Tetrazzini

  • 1/2 c. butter
  • 2 to 3 lb. chicken breasts or a whole chicken
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1 pint (16 oz.) sour cream
  • 16 oz. spaghetti noodles, cooked
  • 16 oz. fresh sliced mushrooms
  • pepper and garlic salt to taste
  • grated Parmesan and Romano cheeses (or just Parmesan)

Cook chicken in water seasoned with a bit of garlic salt until done.  Remove meat from bones if whole chicken, cut up breasts if not.

Saute mushrooms in butter.  Add soup mixes and sour cream and spices to taste.  Layer in 9 x 13 baking dish or pan:  1/2 spaghetti noodles, 1/2 mushrooms & soup mixture, 1/2 cheese, repeat.  Bake in 350° oven for 30 to 40 minutes.

SWISS MUSHROOM CHICKEN
4 boneless chicken breasts, pounded flat if desired
Salt, pepper and your choice of seasonings
1/2 pound mushrooms, sliced
2 tablespoons butter
4 thin slices deli ham
4 slices Swiss cheese, about 1 ounce each

Season the chicken as desired; grill or sauté till just done. Place the chicken in a large baking dish. Sauté the mushrooms in the butter until tender. Top each piece of chicken with a slice of ham, 1/4 of the mushrooms, then a slice of cheese. Bake at 350º for 15-20 minutes until everything is hot and the cheese is melted.

Makes 4 servings
Can be frozen

Now, this isn't Hamburger Helper and you won't find any pasta in it.  What you WILL find is a healthy, low-carb meal that everyone enjoys!


Bacon Cheeseburger Skillet meal

  • 12 oz. bacon, cooked and crumbled
  • 2 lb. ground beef
  • 1 small onion, chopped
  • 1 clove garlic, minced (1/2 tsp.)
  • 8 oz. fresh mushrooms, sliced
  • 3/4 tsp each salt and pepper
  • 15 oz. can tomato sauce
  • 1/2 medium cabbage, shredded (about 16 oz.)
  • 8 oz. Deluxe American or Cheddar cheese, diced (do NOT use cheese food)

In a very large skillet or Dutch oven, brown the ground beef with the onion, garlic, and mushrooms.  Season with salt and pepper.  Add the tomato sauce and cabbage; stir to coat the cabbage with the sauce.  Simmer uncovered for about 10 minutes until the cabbage is tender.  Stir in the bacon and diced cheese; stir until cheese is melted.  Serve.
