The best thing about summer is the huge variety of delicious, juicy, ripe fruit at rock-bottom prices, in the grocery store and at the farmer's market. My favorite way to eat it is fresh, standing over the sink to catch the juices. Summer fruits also cook up into luscious desserts.
Strawberry shortcake is the classic summer dessert. Sure, you can use those sponge cakes displayed next to the berries in the supermarket, but making your own biscuit-style cakes and even whipping your own cream is hardly more difficult and even more delicious. This recipe uses ice cream, but I think it's more delicious without it.
Peach melba is a classic dessert that your grandma probably enjoyed, and I agree with Nigella Lawson (her recipe is here) that it's high time for a revival. It's simply poached peaches and raspberry sauce over ice cream, and it's thoroughly delicious.
It doesn't get much easier, or showstopping, than grilled fruit. Grilling concentrates the sugar in fruit and gives it a complex flavor. This recipe for grilled pineapple has tequila in it...most of the alcohol should cook off, but there would be no harm in leaving it out if you wanted to avoid alcohol entirely.
