Simple Cooking: Chowing Down on What's In Season
When I think about summer, most of my memories turn to food. It's no coincidence since my family's home was a hub of energy and entertainment during the summer months. From the last day of school to the first of the fall, we had tons of people in and out of our house for summer cook outs in the backyard.
Out of all the food that was cooked, corn on the cob seemed to be my favorite. Why did we eat a lot of it during that time? It was in season, and therefore very affordable.
It was never anything fancy. Just a cob, coated in butter and salt, wrapped tightly in tin foil, then placed on the grill to cook. I can taste it now. Today, I've amped up the recipe a bit, adding paprika, chili powder and cilantro to the mix before closing up the tin foil to cook the cobs. When its finished, I add cojita (a type of soft crumbling Mexican cheese).
