Healthy Picnics To Make The Most of Summer
It's been a glorious, amazing summer where I live (which we were due for, after a historically bad winter). We've been spending every minute we can outside enjoying it. One of my favorite ways to do that is to pack lunch or dinner and head for the zoo, the pool or the park so we can maximize our fun time. It's easy enough to grab some sandwiches and drinks at the grocery store, but we're living a healthier lifestyle these days. Here are some ideas for delicious and yet healthy summer dishes that are portable and picnic-friendly.
Raw veggies with hummus, light ranch or bean dip;
Fresh fruit instead of sweets...my kids and I can eat cherries like they are candy, so why not have them instead of candy?;
Pasta or whole-grain salads flavored with herbs and vinaigrette instead of mayonnaise, grilled vegetables, and a small amount of a flavorful cheese like feta, goat or milky fresh mozzarella;
Turkey and cheese rollups or wraps instead of bready sandwiches...the bonus is these are easier to transport!
