Summer is definitely upon us. If you don't believe me, take a look at this week's forecast. It's time to break out the sunblock and the shorts.
But with the heat, comes the need for fresh healthy meals. No one wants to eat a heavy dinner during the summer months so out goes some of our weekly staples like spaghetti.
But I've given this old favorite a twist. Instead of using starchy think pasta, I use spaghetti squash instead. And instead of a rich sauce, I chop up roma tomatoes, basil, and garlic for a lighter topping. I mix it all together and top with fresh parmesan cheese. Serve as is (like I did) for a vegetarian meal, or add turkey meatballs for some added protein.
The result is a tasty and healthful dinner that the whole family enjoys. Leftovers are great cold straight out of the fridge.
