These cheese-stuffed babies are perfect for a party, as they are bite-sized, addictive and are served with a dipping sauce. They also can be made in abundance fairly cheaply, depending on the cheese you opt to use. I like Gorgonzola, but mozzarella is also delicious.
2 cups cooked white rice
3/4 cup grated Parmesan
8 small chunks of Gorgonzola or mozzarella
1 cup seasoned breadcrumbs
Vegetable oil for frying
In a bowl, mix together the rice, Parmesan and 1 egg to combine. With your hands, form eight balls of the rice mixture and gently push a chunk of the cheese into the center of the rice. While your oil heats up, beat the remaining 2 eggs together and dip the rice balls in the egg, then roll them in the bread crumbs. Fry the rice balls until golden brown on both sides, salt lightly and serve with a side of marinara.
