Welcome to Day 3 of the Easy Weeknight Meals Challenge! Each day we'll give you tasty new recipe to go along with a new food theme!

Here is an easy recipe to try for today's theme: Chicken

Recipe Name: Easy Curry Chicken

Recipe Description: This flavorful chicken dinner is easy when you make it in the slow cooker.


Ingredients and Procedures:

  • Prep: 15 minutes
  • Slow Cook: 4 hours (HIGH) or 8 hours (LOW)


  • 2 cans (14.5 ounces each) chicken broth
  • 1 pound skinless, boneless chicken thighs, cut into 1-inch pieces
  • 2 cups coarsely chopped cauliflower
  • 2 cups coarsely chopped carrots
  • 1 cup coarsely chopped onion
  • 1 tablespoon curry powder
  •  tablespoon grated fresh ginger
  • 3 cloves garlic, minced
  • 1 cup unsweetened light coconut milk
  • 1 cup frozen peas
  • ¼ cup snipped fresh cilantro
  • 2 cups hot cooked rice (optional)



1. LINE a 5- to 6-quart slow cooker with a Reynolds® Slow Cooker Liner.

2. ADD broth, chicken, cauliflower, carrots, onion, curry powder, ginger, and garlic to the prepared slow cooker. Stir gently with a rubber spatula to combine.


3. COVER and cook for 4 hours on high or for 8 hours on low.

4. STIR in coconut milk and peas. Cover and cook about 10 minutes more or until heated through.

5. TOP with cilantro to serve. If desired, serve with hot cooked rice.


Prep this flavorful curry dish before heading out the door in the morning and a delicious dinner will be ready when you get home. To clean up, simply toss the slow cooker liner and enjoy your evening.

I love a new crockpot recipe to try.

We have chicken a couple times a week

We usually eat chicken 2 to 3 times a week.  It's easy to make, tastes good, but we ate poultry as our primary source of meat for close to 3 years and just got SICK of it!

I'm making this  for tonight, in the crockpot:

Spicy Roast Chicken

  • 1 large whole chicken
  • 3 tsp. salt
  • 2 tsp. paprika
  • 1 tsp. cayenne pepper (you can cut this down if you don't care for the "heat")
  • 1 tsp. onion powder
  • 1 tsp. thyme
  • 1 tsp. black pepper
  • 1/2 tsp. garlic powder

Combine all the spices and rub under the skin of the chicken. Rub a bit on the inside too, and any leftover on the skin.  Put it in the crockpot, cover and cook on low for 6 to 8 hours.

This one is very easy despite how it looks in the recipe.  My kids love this and like to make it.

Chicken Alfredo


  • 1 1/2 lbs. boneless chicken breast, cut into 3/4 inch chunks
  • 2 Tbsp. olive or vegetable oil
  • 1/2 tsp. minced garlic
  • salt and pepper


  • 8 oz. cream cheese
  • 1/2 c. butter
  • 3/4 c. milk
  • 3/4 c. grated Parmesan cheese
  • 1/2 tsp. white pepper (may also use black pepper)

16 oz. cooked spaghetti, linguini, fettucini or angel hair pasta


Cook chicken in olive oil with garlic and salt and pepper. While chicken is cooking, melt cream cheese and butter together in saucepan. Stir until smooth. Stir in milk, Parmesan cheese and pepper. Pour chicken and juices over spaghetti in a serving dish, then top with sauce and sprinkle parsley on top.

This is a SUPER simple, SUPER fast dinner to throw together! It does take 30 minutes to bake. My family LOVED it!!! I added a tossed salad and some green beans to round it out.

Bruschetta Chicken Bake

  • 1 14 1/2 oz. can diced tomatoes, undrained
  • 2 garlic cloves, minced OR 1 tsp. minced garlic
  • 1 6 oz. box chicken flavored stuffing mix
  • 1/2 c. water
  • 1 1/2 lbs. boneless skinless chicken breasts, cut into bite sized chunks
  • 1 tsp. dried basil
  • 1 c. shredded mozzarella cheese

Preheat oven to 400 degrees. Place tomateos with liquid in medium bowl. Add garlic, stuffing mix and water; stir just until stuffing mix is moistened. Set aside

Place chicken in 13 x 9 baking dish; sprinkle with basil & cheese. Top with stuffing mixture. Bake 30 minutes or until chicken is cooked through.

Chicken and cheese make a great dish for kid appeal:

Cheesy Chicken Lasagna

  • 3 Tbsp. margarine
  • 1/2 c. chopped onion
  • 1 can cream of chicken soup
  • 1 4 oz. can mushroom pieces, drained
  • 1/3 c. milk
  • 16 oz. container cottage cheese
  • 6 lasagna noodles, cooked
  • 2 to 3 c. cooked chicken, cut up
  • 1 8 oz. pkg shredded Cheddar cheese
  • 1 8 oz. pkg. shredded Mozzarella cheese
  • 1/4 c. grated Parmesan cheese

Melt butter in a medium saucepan and saute onion. Stir in soup, mushrooms, milk and cottage cheese. Layer half the noodles in a 9 x 13 pan. Cover with 1/2 the sauce mixture, 1/2 the chicken and 1/2 of each the Cheddar and Mozzarella cheeses. Repeat and top with Parmesan cheese. Bake at 350 degrees for 45 to 50 minutes.

Honey Mustard Chicken

3 Tbsp. honey

3 Tbsp. spicy brown mustard

1 Tbsp. vegetable or canola or coconut oil

1/2 tsp. salt

1/4 tsp. black pepper

3 lb. (8 pieces) chicken

Mix all but the chicken together.  Spread on chicken pieces.  Place pieces on a foil lined baking pan that was sprayed with cooking spray.  Bake at 400° 35 to 40 minutes.

Artichoke Chicken Bake

EASY yet elegant, and tasty!

  • 14 oz. can water packed artichoke hearts, drained and chopped
  • 3/4 c. grated Parmesan cheese
  • 3/4 c. mayonnaise
  • 2 garlic cloves, minced
  • 4 boneless skinless chicken breast halves

Preheat oven to 375°. Salt and pepper the chicken breast halves and place in a greased baking dish.

Combine the artichoke hearts, Parmesan cheese, mayonnaise and garlic; mix well. Spread over chicken breasts.

Bake 30 to 35 minutes until chicken juices run clear.

Makes 4 servings

Rosemary chicken & potatoes

  • 6 bone-in chicken thighs
  • 1 1/2 lbs. red potatoes, cut into 1 inch cubes
  • 2 Tbsp. vegetable oil
  • 2 tsp. paprika
  • 1 1/2 tsp. crushed rosemary leaves
  • 1 tsp. dry minced garlic
  • 1 tsp. salt
  • 1/2 tsp. ground black pepper

Mix oil, spices and salt in a large bowl. Add chicken and potatoes; toss to coat well. Arrange chicken and potatoes in single layer on foil-lined cookie pan sprayed with cooking spray. Roast in a preheated 425°F oven 30 minutes or until chicken is cooked through and potatoes are tender, turning potatoes occasionally.
