Welcome to Day 5 of the Easy Weeknight Meals Challenge! Each day we'll give you tasty new recipe to go along with a new food theme!

Here is an easy recipe to try for today's theme: Pasta

Quick and Easy Homemade Macaroni and Cheese


  • Prep Time: 10 minutes   
  • Cook Time: 35 minutes    
  • Makes: 6 servings

A great twist on a childhood favorite, this three cheese baked macaroni and cheese is easy and delicious. Plus, by using pan lining paper, you'll eliminate time-consuming scrubbing and soaking to remove baked-on cheese from the casserole dish!

Ingredients:

  • 1/4 cup butter
  • 1/2 yellow onion, finely chopped 
  • 2 garlic cloves, minced
  • 1/4 cup all-purpose flour
  • 3 1/4 cups milk
  • 1 cup chicken stock
  • 2 cups sharp cheddar cheese, shredded
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup parmesan cheese
  • 16 ounces elbow macaroni, cooked and drained

Prep:

1. PREHEAT oven to 350°F.

2. LINE a 13x9x2-inch baking dish with Reynolds Wrap® Pan Lining Paper with parchment paper side toward food. Crimp pan lining paper around rim of casserole dish; set aside.

3.  PLACE butter, onion and garlic in large saucepan. Cook over medium heat until onion is tender. Add flour and whisk until smooth. Pour in milk and chicken stock, whisking constantly. Heat until mixture is thickened and smooth.

4. ADD three cheeses; stir until cheese is melted. Stir in cooked macaroni.

Cook:

1.  POUR mac and cheese into lined casserole dish.

2. BAKE uncovered for 35 to 45 minutes or until golden brown and bubbly.

Reynolds Kitchens Tip: Use pan lining paper as a tear resistant liner, so you'll have no problem scooping and serving this delicious dish right from the pan. Plus, it eliminates time-consuming scrubbing and soaking to remove baked-on cheese from the casserole dish. The best and fastest way to use pan lining paper? Turn your pan upside down and press a sheet of pan lining paper around it. Remove pan lining paper, flip pan over and drop pan lining paper inside. Crimp the edges around rim of pan. Easy cheesy!

We don't eat pasta at home or when out for dinner.  Before we made this change in our diet, we liked lasagna and baked mac & cheese.

Oh my gosh this is like my childhood favorite comfort food... We eat pasta at least a couple of times aweek, either in Mac tomato hamburg or as a primavera side usually. Summertime calls for cold pasta salads too,

Todd and I eat low carb so we don't eat any pasta or grains except maybe couple times a year on special occasions... one of our 5 adult kids favorite pasta dishes I make is my lasagna.. they said they tried a lot of other people's and at nice restaurants and now they don't even like to try others' lasagna bc they compare it to mine and they only like mine. awwwwww Sometimes I  make it for them on a holiday get together meal like Christmas or their birthday or something.

Probably twice....I'm trying hard to cut down on pasta and other complex carbs, but it's really hard when you have kids and a hubby that insist on them.

I have the pan lining paper but really haven't used it much. This sounds good.

We eat it probably once a week or so.  DD loves mac and cheese and plain noodles with a small amount of butter.

My dh is Italian, and loves pasta, but we're cutting down on carbs, so we don't eat it very often.

We eat pasta about once a week. We actually just had Mac and cheese yesterday. I make eight quarts of spaghetti sauce every few months and freeze it. It has meat in it, so all I have to do is boil noodles. I also make and freeze lasagna using the sauce.
