This is one of my uncle's recipes. We made it using thin strips of round steak and chicken breast. I haven't tried fish yet, but I think it would be GOOD!


Jerky

3/4 c. barbecue sauce (we used my honey BBQ sauce recipe from July 2009 posts)
1/2 c. molasses
1/2 c. honey or brown sugar
1/2 c. Tender Quick salt (curing salt)
1/2 c. water
1/4 c. liquid smoke (we used hickory)
2 Tbsp. garlic salt
2 Tbsp. white vinegar
1 Tbsp. dry mustard
1 Tbsp. ground black pepper

Combine all ingredients. Pour over strips of beef, venison, chicken or poultry in a large bowl. Cover and refrigerate 36 hours, stirring every 2 hours. Hang strips to dry in warm oven (about 200°) for 12 to 15 hours (until meat is dry) or in a dehydrator (ours took about 8 hours to dry.)

I prefer to store in an airtight container in the refrigerator.

  • Steak & Gravy

    • 2 to 2 1/2 lb. round steak, cut into serving size pieces
    • 1 pkg. dry onion soup mix
    • 1/4 cup water
    • 1 can condensed cream of mushroom soup

    Place steak pieces in crockpot. Add rest of ingredients. Cover and cook on low for 6 to 8 hours. Serve with mashed potatoes or rice.

  • Swiss Steak

    • 2 lbs. round steak, cut into serving size pieces
    • 2 Tbsp. flour
    • 1 tsp. salt
    • 1/8 tsp. pepper
    • 2 to 3 Tbsp. vegetable oil
    • 1 16 oz. can diced tomatoes
    • 1 small onion, diced
    • 1 small green pepper, diced
    • 1 stalk celery, sliced thin
    • 1 tsp. worcestershire sauce

    Mix flour, salt and pepper. Coat steak pieces with flour mixture and brown on both sides in hot oil. Place pieces in crock pot. Mix rest of ingredients and pour over steak. Cover and cook on low for 6 to 8 hours.

Pepper Steak

Slice beef into 1/4" strips no longer than 3". 

Heat 1 Tbsp. oil in skillet on medium high heat and saute onion and garlic until tender.  Remove with a slotted spoon. 

Add rest of oil and beef and cook until beef is browned.  Remove with a slotted spoon.

Add broth, soy sauce, sugar and pepper to skillet.  Stir well.  Return onions, garlic and beef to skillet, cover and simmer about 30 minutes.

Add celery, peppers, and tomatoes and cook until crisp tender, about 5 minutes.  Dissolve the cornstarch in the cold water and slowly stir into the skillet until thickened, about 2 minutes.  Serve over hot rice.

Spanish Beef & Rice

  • 2 lb. round steak, cut into strips
  • 1 15 oz. can diced tomatoes
  • 1 10 oz. can Rotel tomatoes with chilies
  • 8 oz. can tomato sauce
  • 1 medium onion, sliced
  • salt and pepper to taste
  • vegetable or canola oil
  • hot cooked rice

Place strips in a plastic bag or bowl; add enough salt and pepper to taste and mix very well. In heavy skillet (I used my electric skillet) brown the seasoned steak strips in hot vegetable oil; saute onions with the beef strips. Add tomatoes, Rotel tomatoes with chilies, and tomato sauce. Cover and cook on medium low heat (about 275°) until done. Serve over hot rice.

Country Fried Steak

  • 1 c. flour
  • 2 tsp. salt
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1 tsp. ground black pepper
  • 2 to 3 lb. round steak, trimmed and cut into serving sized pieces (can also use cubed steaks and cut back on cooking time)
  • buttermilk or egg beaten w/1 tbsp. water
  • 1/4 c. butter

Gravy:

  • 2 Tbsp. butter
  • 1/2 c. reserved flour mixture
  • 2 c. milk or 1 c. heavy cream + 1 c. water
  • extra water as needed

Mix flour and seasonings.  Soak steak pieces in buttermilk or egg mixture, then dredge in the seasoned flour mixture (reserve 1/2 c. mixture for gravy).  Brown carefully on both sides in butter in a skillet over medium heat.  Cover and cook over low/medium-low heat for about 45 minutes (you may want to add a little bit of water) until tender.  Remove steaks from skillet and cover to keep warm.

For gravy:  melt butter over medium heat in the same skillet that you cooked the steaks, scraping browned bits of steak from the bottom.  Stir in the reserved flour mixture and cook for about a minute.  Slowly whisk in the milk a bit at a time, waiting until the mixture thickens before adding the next bit of milk, until all of the milk has been added and gravy is thick.  Add extra water and whisk to achieve desired consistency.  Serve over steak and accompanying mashed potatoes or rice.

This is pretty close to what I do although I don't use a recipe.  I don't use Worchestershire, but will do so next time.

Steak & Onions-Round Steak

1lb. Round steak cut in serving pieces

1 (10 oz. Can) cream of mushroom soup
1-2 onions, sliced
1/3 cup water

Brown meat on both sides, drain grease. Pour soup, water & onion over meat. Simmer on low heat for 1-1 ½ hours or till meat is fork tender.

Round Steak Parmesan
1 1/2 lbs. round steak, tenderized
1/2 cup dry bread crumbs
1/2 cup grated parmesan cheese
1 egg, beaten
1/3 cup vegetable oil
1 small onion, chopped
1 teaspoon sugar
1 Tablespoon Soy sauce
1 teaspoon seasoning salt

1 teaspoon celery seed
2 cups water
1 16oz. can tomato sauce
1 1/2 cups Mozzarella cheese, grated
Preheat oven to 350. Trim meat of excess fat and cut into serving size pieces Tenderize it by using a meat mallet or even the side of a heavy saucer, just hit it a few times on each side to help break down tough meat fibers.. Combine crumbs and Parmesan cheese. Dip meat in it and roll in crumbs. Brown over low heat. Place in 9x13" baking pan. Sauté onion in meat drippings. Stir in sugar and seasonings, tomato sauce and water. Boil 5 minutes. Pour over meat in pan. Cover with foil and bake 1 hour. Uncover, top with cheese and bake about 15 minutes more or till cheese is melted and sauce is bubbly.

Pepper Steak
1/4 cup cornstarch, divided
1/2 teaspoon ground ginger
1 (10 1/2-ounce) can beef broth
2 tablespoons soy sauce
1/2 teaspoon salt
1/2 teaspoon pepper
1 pound boneless top sirloin steak, cut into thin slices
1 tablespoon vegetable oil
2 teaspoons sesame oil
1 garlic clove, minced
1 green bell pepper, sliced
1 onion, sliced
Hot cooked rice
Whisk together 2 tablespoons cornstarch, ginger, beef broth, soy sauce; set aside.

Combine remaining 2 tablespoons cornstarch, salt, and pepper; dredge steak in mixture.

Heat vegetable oil and sesame oil in a large skillet over high heat 3 minutes; add steak and garlic, and sauté 4 minutes or until browned.

Add bell pepper and onion; sauté 8 minutes or until tender. Stir in broth mixture; reduce heat, and simmer 3 to 5 minutes or until thickened. Serve over hot cooked rice.

Notes: This can also be made with flank steak or round steak (cook longer with a little water added, till almost tender, before adding peppers and onions). You can also add wedges of tomatoes just a couple minutes before serving.
