One Pot Beef Stroganoff

This was one of my mother's comfort food staples when I was growing up, and I've recently rediscovered its deliciousness and started making it on my own. I really hate making a lot of dishes to wash, especially on the weekdays, so this recipe is great since it just utilizes one pot. Add a salad to the side and this is a pretty wholesome meal.


Ingredients:

1 tbsp olive oil

8 ounces crimini mushrooms, washed and sliced

2 tbsp butter

1 onion, diced

2 cloves garlic, minced

1 lb ground Beef

3 tbsp flour

1 tsp paprika

1/4 cup white wine

4 cups beef broth

2 tsp salt

1/2 tsp pepper

8 ounces uncooked egg noodles

3/4 cup sour cream


Add the oil to your pan and heat over medium heat. Add the mushrooms and cook for 5 minutes, stirring periodically. Set the mushrooms aside and add the butter to the pan. Cook the onion and garlic in the butter till tender. Add the beef, salt and pepper and brown in the pan. Add the flour and paprika to the meat, stirring it in well. Add the wine and allow to cook down for a few minutes, and then add the beef broth. Bring to a simmer and then add the mushrooms back in, and stir in the egg noodles. Allow to cook at a simmer until the egg noodles are tender. Remove from heat and stir in the sour cream before serving.

I prefer cubed beef rather than ground beef in my stroganoff.

I pass along all of my recipes to my family.  I'm even thinking of making a cookbook for Christmas.

I prefer the cubed as well.
