Refreezing

We get our beef from a local farmer, so I currently have 55 lbs of frozen ground beef. I thawed two pounds with the intent to make and bake one meatloaf and make andfreeze (without baking) a second meatloaf. Can I thaw and refreeze that meat? It was thawed in cold water to start it, then put in the fridge.

You sure can thaw and refreeze!

 You can, but the quality may suffer. It would be better to cook the meat and freeze. I often double cook and freeze for later. Then all you have to do is reheat. Meatloaf works out fine that way. Saves a lot of time later. Also best to thaw out over night in the refrigerator when you're ready to eat it.
